Dentin

A yellowish hard tissue located beneath the enamel that forms the main body of the tooth.

It is softer than enamel and is connected to the nerves of the pulp through fine tubules (dentinal tubules), so when exposed it causes sensitivity. It largely determines the color of the tooth.
